Easy roasted vegetable and chicken couscous

This is so easy! Just throw everything into the oven and when it’s cooked mix it with couscous. Toddlers tend to love the texture of couscous and this tastes slightly sweet and fruity, perfect for toddlers and young children.


  • 2 courgettes
  • 2 red peppers
  • 2 orange peppers
  • 1 red onion
  • 2 cloves garlic
  • 1 spring fresh rosemary, optional
  • 1 pack Sainsbury’s Taste the difference free-range chicken thighs (approx 500g) – skin removed
  • 2 tbsp olive oil
  • 250g Sainsbury’s couscous
  • 250ml boiling water
  • Large handful fresh mint, finely chopped
  • Juice of ½ orange


  1. Preheat the oven to 190°C, fan 170°C, gas 5. Trim the courgettes and cut into small pieces. Cut the peppers in half, deseed, and cut into small pieces. Peel the red onion, cut in half and then cut into small pieces. Put all of the vegetables, garlic and rosemary (if using) with the chicken pieces into a roasting tin. Drizzle with a little olive oil and roast for 35 mins or until the chicken is cooked through. You might like to stir the vegetables once to move them around the pan.

  2. Meanwhile, put the couscous into a bowl and pour over the boiling water and then rest a plate over the top. Leave until the couscous is fluffy.

  3. Cut the cooked chicken into small pieces.

  4. Break up the couscous with a fork, squeeze the garlic out of its papery cases and add to the couscous with the roasted vegetables and chopped chicken. Scatter over the fresh chopped mint and orange juice and mix everything together.
